Memorial Day is now in the books, and we all know that Summer is just banging to hit the waves. And what wouldn’t be Summer without our favorite soulful dish, Banana Pudding. No family reunion, repass, reception or Sunday dinner would be complete without this tasty famous confection.

When I make this delicious dessert, I use only the best bananas, vanilla wafers and pudding mix. I do not believe in using Instant pudding mix.
However, they do not seem to have the pudding mix that you boil anymore. But adding a little honey helps if you have to add more milk to loosen it up as it boil.
In addition, when I have to buy the instant brand, it is horrible, because it gets to thick as it cooks. As a result, adding milk to it doesn’t help at all, but if you can get it to soften a bit, it will smoothly cream over the cookies and bananas laying it out well.
Everyone in my life knows that I grew up loving banana pudding. In fact, my mom use to make it for me specifically, even when she knew I was the only one who cared for it.
Conversely, being a banana lover all my life, this dish has always been my comfort food. I sometimes have to eat it every other month occasionally.
My mouth is watering for a scoop right now as I type. In a delicious conclusion, here is the recipe for a simple personal bowl of this succulent dessert.

8 plumb not too ripe bananas
A medium sized box of vanilla wafers
Teaspoon of honey
Box of instant vanilla pudding mix( I did find some Cook and Serve pudding mix at Wal-Mart)
Medium sized pot
Two cups of 2% milk or condensed milk
Slice the bananas up in round pieces, and then layer them in the bowl with the wafers. Once you reach the top turn the wafers over creating a cap. Boil the instant pudding/Cook and serve, with milk; adding honey for flavor, if you are using extra milk to smooth out the pudding. Pour the mixture on top of the layered dish. Let it cool, and after that place it in the refrigerator..
Some people like whip cream and caramel on their dishes. But I prefer the old fashion method, but in the picture, I did add strawberries.

Last, if the mixture cakes up too thick as it cools. I would suggest a quick hit inside the microwave, but not too long, because you don’t want burnt cookie taste. Bon appetit…
