A Grammys Moment with Trevor as I Prepared My Comfort Food ‘Banana Pudding’

Getting you ready for a soulful Summer favorite, that I had time to make during the Grammy Awards ceremony

Grammys Moment

The weather started gloomy with stubborn clouds lingering on all morning into the afternoon. Then the sun popped out briefly. And while this was happening, my mind was on the Grammys on CBS, and my preparation of my favorite dish Banana Pudding.

When I make this delicious dessert, I use only the best bananas, vanilla wafers, and pudding mix. However, they do not seem to have the pudding mix that you boil anymore.

I had to buy the instant brand, which is horrible because it gets too thick as it cooks. Adding milk to it doesn’t help at all, but if you can get it to soften a bit, it will smoothly cream over the cookies and bananas layers well.

Everyone in my life knows that I grew up loving banana pudding. My mom used to make it for me specifically, even when she knew I was the only one who cared for it.

In the picture, I only made enough for about 4 servings in a quarter square bowl. In addition to watching the Grammys, I wanted to save some for lunch tomorrow.

Conversely, being a banana lover, this dish has always been my comfort food. I sometimes have to eat it every other month or occasion.

But since I have been on a ‘Dry January’ extension, the comfort food has been constant.

Now, as I continued to enjoy the 64th annual Grammys Awards Show on CBS with host Trevor Noah, I decided to grab myself a second taste. \

Trevor Noah, renowned comedian and television host, graced the Grammys 2024 with his sharp wit and charismatic presence. As the evening’s host, Noah delivered a series of insightful and humorous monologues that captivated the audience, seamlessly blending comedy with the celebration of musical achievements.

Here is the recipe for a simple personal bowl of this succulent dessert.

6 plump not too ripe bananas
A medium-sized box of vanilla wafers
Teaspoon of honey
Box of instant vanilla pudding mix (it is hard to find the cook-and-serve brand)
Medium-sized pot
Two cups of 2% milk

Slice the bananas up into round pieces and then layer them in the bowl with the wafers. Once you reach the top turn the wafers on top. Boil the instant pudding with milk, adding honey for flavor if you use extra milk to smooth out the pudding. Pour the mixture on top of the layered dish. Let it cool, and after that place it in the refrigerator.

Still, if the mixture cakes up too thick as it cools, I would suggest a quick hit inside the microwave but not too long because you don’t want burnt-tasting bananas.

Variation

For those looking to add a twist to the classic Banana Pudding, here’s a variation that incorporates a bit of chocolate for a delightful contrast.

Box of chocolate pudding mix
Medium-sized pot
Two cups of 2% milk
A handful of chocolate chips

Begin by slicing the bananas into round pieces and layering them in the bowl with vanilla wafers. Sprinkle a handful of chocolate chips between each layer for that extra chocolatey surprise.

Instead of the traditional vanilla pudding mix, opt for a chocolate pudding mix. Boil it with milk as per the instructions on the box, adding honey to enhance the flavor. If you find the mixture too thick, a little extra milk can help achieve the desired consistency.

Once boiled, pour the chocolate pudding over the banana and wafer layers, ensuring it seeps into every nook and cranny. Allow it to cool before placing it in the refrigerator to set.

This chocolate-infused Banana Pudding is sure to be a hit for those who enjoy the classic but are craving something with a bit more depth.
